I'm thinking of getting a refurbished iPad and Apple Pencil. I want to use it for journaling and taking notes in my books. Would this be possible or should I look elsewhere?

There are many journaling apps. You could use the Apple pencil with those, doing hand-writing with the pencil. You can take notes in the Kindle app (see attachment) but it has a keyboard so any stylus or even your finger would work.
In conclusion, I can leave you with no better advice than that given after every sermon by Msgr Vincent Giammarino, who was pastor of St Michael's Church in Atlantic City in the 1950s:

Thanks, Lynne. I settled on a Samsung Galaxy Tab 6s Lite. It was on sale for Black Friday. Can't wait to try it out!

Tablet came today, and it's terrible. I'm so disappointed, and now I'm scared to try another brand.

iPads are wonderful! I wish you could try one out. Some libraries lend all kinds of things.
