I might do a veggie pasta salad, using whatever vegetables we have in the fridge.  Maybe a quick foccacia to go with....

I am making salmon and baked sweet potatoes and steamed veggies.

My doctor insists I eat salmon twice a week from now on, so I don't have the excuse of it being too expensive to have often. I love it anyway, and now it counts as medicine, not just delicious food.  :D
