Looking to play a certain Steam game, but my laptop's specs are below the recommendations. Will it damage it if I try to play anyway?

No, at the worst it will just run badly or not at all. If the fan kicks in that usually means that the CPU is struggling. If it is a laptop and feels very hot that would indicate struggling too.

I suspect there would be some kind of auto shutdown (thermocouple) In the event of overheating.

TLDR; It will be fine.

Excellent. Just updated the graphics driver and it looks like the game should run. :)

I had problems with my computer overheating.  I was playing a game which worked fine on my old PC, but then I ran into problems with the new gaming PC I ordered from HP, even on the lowest graphic setting!  Then I started suspecting overheating, since the PC sits in a side cabinet in the desk.  So I drilled 1" holes in the back, and placed a small desk fan on top which I run when playing games.  Problem solved.  Apparently HP's are notorious for overheating.

Try it, and let us know if it fried your computer.

What games do you play?

I'll be buying a new PC for flight sim by the end of the year and it will be a beast so I'm going to need to water cool it

Like clau said, should be fine. You can always mess around in settings too and lower them. Good gameplay beats good graphics!
