I'm making pizzas using leftovers. I have one with meatballs, one with grilled chicken and fresh tomatoes, one with spinach and mushrooms, and one with several different cheeses.

How did you do them?  They are hard to get tender, and not dry.  I find smothering them in a dutch oven for a long time works well; or, in the crockpot.  Crockpot is a pretty safe but, but you don't quite get the depth of flavor as in a dutch oven.  Oven roasted chops are kind of hit or miss for me.  I can always get the flavor right, but the tenderness not so much.

I seared them and finished in oven (cast iron skillet).

I'm making the best chicken tacos ever with Spanish rice and retried beans and salsa and guacamole, and I made way too much and wish I could share.  :)

roll all the leftovers (minus salsa and guacamole, but add cheese) into burritos, and put them in the freezer for later.  You're welcome  :P

It's spaghetti night here.

The recipe says "Crustless Quiche" but it does look very much like a frittata.
