Question: why would the Orthodox give a symbol of power and authority to the putative office holder whose power and authority they do not recognize, particularly as concerns the office?

Aside from the fact that the Eastern Orthodox Bishop Mitre has basically developed into a crown, and as such, the crown represents Bishopric authority in the Orthodox Church, and have canonized Tsar Nicholas II and his family as martyrs of the Communists, the Orthodox, particularly those who are Slavic, tend to be very Maximalist when it comes to the Ornates Liturgy, and see it as an intrinsic good.

Here's a video of the Russian Orthodox Patriarch holding the "Washing of the Feet" service, where - in a beautiful, symbolic, and paradoxical manner - the Bishop continues to wear his Mitre as he removes his Pectoral Cross,  Sakkos (Bishop's Chasuble) and his Omophorion (Orthodox equivalent of Pallium) and washes the feet of twelve priests, who are clothed with golden and purple vestments.
