I have about a quart sized jar that's on the verge of turning rancid.

What's the best way to dispose of it?

I know pouring it on the ground outside is probably the best, but more specifically is there something I could do to keep the critters from getting into it?

I would dig a smallish hole, not super deep, pour it in and fill the dirt back in after the ground has absorbed the oil. Animals wouldn't be interested in almost-rancid oil I shouldn't think (unless you meant dogs, they like all sorts of stuff).  ::)
In conclusion, I can leave you with no better advice than that given after every sermon by Msgr Vincent Giammarino, who was pastor of St Michael's Church in Atlantic City in the 1950s:
