Where do you draw the (paella) line?

A paella must have:

Meat: always chicken and traditionally also rabbit.

Traditional garden products: Garrofón (large beans), tabella (small beans), Batxoqueta (flat beans)

Round rice, preferably with a designation of origin such as Bomba, Sendra or Calasparra, but if not, at least round rice.

Tomato, saffron and paprika

That's the essential thing

Then there are variations. Some add a few cloves of garlic and rosemary, others add snails, others add sausages, etc., but the essential thing is that.

You could make paella if you wanted to.  You already know how to stir a pot and that's the main skill involved.  :)
