Soaking it in milk just makes it taste less like liver.  If the taste doesn't offend you, it's not necessary.

My problem with cooking it in slices has always been that it ends up pretty tough.

That's why I tend to chop it up and boil it with other meat.  Otherwise its like a cheap, nasty steak.

What my grandma always called "Country Style miso soup," which is miso soup with big pieces of tofu, carrot, onion, daikon, yamcake, taro potato, and pork. Absolutely delicious, especially with rice in it. Classic comfort food for cold weather. @Maximilian.

I've only ever made vegetarian miso soup. In my mind, miso soup is associated with Friday's. It's never a hearty soup like you describe. Usually: tofu, seaweed, mushrooms, anchovies, udon noodles.

Tonight was pizza as is family tradition on Christmas Eve.

Tomorrow:
Rib roast
Roast potatoes (in lard with rosemary salt)
Green Beans and carrots
Stuffing (dressing, depending on which way you swing)
Yorkshire puddings
Gravy

Breakfast is bacon, hashbrowns and Mimosas


And enough wine to drown the 5th fleet  :cheeseheadbeer:

7lbs of 30 day matured topside beef (was £7.50 a kilo at Tesco about $4.50 per lb so I bought 9 joints).  Then Turkey Crown, because only a few people like Turkey around these parts).  Roast potatoes, Kenyan green beans and 2 litres of gravy.  The boys drown the roast potatoes in gravy.
